Begin by heating vegetable oil in a large pot over medium heat.
Add most of the chopped red onion, reserving a small amount for garnish. Stir in garlic, chili powder, and cumin, cooking until the onion starts to soften, approximately 3 minutes.
Add poblano peppers, mushrooms, and corn, cooking until just tender, about 3 more minutes. Add beans, tomatoes, 1 1/2 cups of water, and 1/2 teaspoon each of Johnny's Seasoning salt and pepper.
