Johnny's Fish & Chips
Ingredients
4 Large Potatoes, peeled and cut into ¼” strips
1 Cup All-Purpose Flower
1 tsp Baking Powder
1 tsp Salt
1 tsp Ground Black Pepper
1 Cup Milk
1 Egg
1 Quart Vegetable Oil for Frying
1 ½ lbs Cod Fillets

Directions
Submerge potato strips in cold water within a medium-sized bowl to prevent browning.
- In another medium bowl, whisk together flour, baking powder, salt, and pepper. Add milk and an egg to the dry ingredients and stir until you achieve a smooth batter. Allow the batter to rest for 20 minutes, for the flavors to set together.
- Preheat oil in a large pot or an electric skillet to 350 degrees F (175 degrees C) for frying.
- Thoroughly drain the potatoes and dab them dry with paper towels. Fry the potatoes in the preheated oil until they are soft, which should take about 5 minutes. Remove the potatoes from the oil and let them drain on paper towels.
- Coat each piece of cod in the prepared batter, ensuring each is well covered, then gently lay them in the hot oil. Fry the fish in batches, turning occasionally, until each piece is uniformly golden brown. Use paper towels to drain excess oil from the fried fish. Keep an eye on the oil temperature, adjusting the heat to keep it steady at 350 degrees F (175 degrees C).
- Re-fry the potatoes in the hot oil until they turn crisp, about 1 to 2 minutes. Remove and drain on paper towels.
