Classic Chili
Ingredients
- 1 tbsp. extra-virgin olive oil
- 1/2 large white onion, chopped
- 3 cloves garlic, finely chopped
- 2 tbsp. tomato paste
- 1 1/2 lb. ground beef
- 1 1/2 tbsp. chili powder
- 1 tsp. dried oregano
- 1 tsp. ground cumin
- 1/4 tsp. paprika
- 1/4 tsp. cayenne pepper (optional)

Johnny’s Seasoning Salt (to taste)
- Freshly ground black pepper (to taste)

½ tsp. Hunter’s Blend
- 1 (28-oz.) can crushed tomatoes
- 1 (15-oz.) can kidney beans, drained
Shredded cheddar, sour cream, and sliced scallions
Directions
In a medium bowl, add ground beef and Hunter’s Blend Seasoning and mix by hand, set aside. In a large pot over medium heat, heat oil, then add onions and cook, stirring Cook for about 5 minutes until slightly softened and translucent. Add garlic and cook for an additional minute until fragrant.
Add in the tomato paste, and stir it to evenly coat the garlic and onions. Then add ground beef and cook for around 7 minutes, breaking up the meat with a spoon, until no longer pink. Drain any excess fat.
Add chili powder, oregano, cumin, paprika, and cayenne (if desired); season to taste with seasoning salt and black pepper (we generally are very generous seasoning alt and pepper). Pour in tomatoes and beans and bring to a boil.
Reduce heat to medium and simmer, stirring occasionally, until flavors have melded and liquid is slightly reduced, about 20 minutes; season final mixture with additional seasoning salt and black pepper, if desired.
Ladle chili into bowls. Top with cheese, sour cream, and scallions.
