Cast Iron Elk Steak
Ingredients
- 2 Elk Steaks 10-12oz ea

2 Tablespoons Johnny's Hunter’s Blend
- 4 Tablespoons Unsalted Butter
- 6 Cloves Garlic
2 Sprigs Fresh Thyme
Directions
1. Heat your stovetop to medium heat.
- 2. Generously season each elk steak with Johnny's Hunter's Blend.
- 3. Place a heavy cast iron skillet on the cooktop and allow it to heat thoroughly.
- 4. Once hot, add 1 tablespoon of olive oil and 1 tablespoon of unsalted butter to the skillet, swirling to coat the surface evenly.
- 5. Place one elk steak in the skillet and sear for 3 minutes to develop a rich crust. Add 2 crushed garlic cloves and a sprig of thyme to the skillet.
- 6. Flip the steak and immediately spoon the garlic-thyme infused butter over the top. Continue to baste for another 2–3 minutes.
- 7. For medium-rare, remove the steak from the skillet at this point. For more doneness, reduce the heat to medium-low and cook until your desired level is reached, flipping occasionally.
- 8. Let the elk steak rest for 5 minutes on a cutting board, loosely covered with foil, to allow juices to redistribute.
- 9. Serve with a sprinkle of fresh chopped parsley and a squeeze of lemon juice for a bright finish.
