Breakfast Burritos

Perfect for busy mornings or meal prep, they’re a warm and satisfying way to start the day.
Breakfast Burritos
Ingredients
- 5 red potatoes
- 2 Tbsp. olive oil
- 1 red bell pepper
- 1 green bell pepper

1/2 tsp. Johnny's Seasoned Pepper
- 1 lb. breakfast sausage
- 12 large eggs
- 1 Tbsp. chopped chives
2 cups monterey jack cheese, divided
Hot sauce, optional
Burrito-sized flour tortillas
Directions
- 1. Boil potatoes in a large pot until fork-tender (15-20 minutes). Cool, dice into 1-inch pieces, and set aside.
- 2. Heat olive oil in a skillet over medium-high heat. Sauté diced red and green bell peppers with half the Johnny's Seasoning Salt and Seasoned Pepper for 8-10 minutes until slightly charred. Remove and set aside.
- 3. In the same skillet, cook potatoes with remaining salt and pepper for 10 minutes, stirring occasionally. Add peppers back in and cook another 10 minutes until golden. Set aside.
- 4. Cook sausage in the same skillet over medium heat, breaking it into small pieces, until browned. Drain excess fat.
- 5. Whisk eggs with chives, seasoned salt, pepper, half the cheese, and optional cayenne or hot sauce. Add the egg mixture to the skillet with potatoes and sausage. Cook over medium-low heat, turning gently to avoid mushy potatoes.
- 6. Once eggs are fully cooked, stir in remaining cheese. Spoon about ¾ cup of the mixture into warmed tortillas, wrap, and serve. To keep warm, wrap burritos in foil and hold in a slow cooker on warm for up to 3 hours.
