Ingredients 4 cups cooked black-eyed peas 8 green onions 1/2 cup chopped cilantro 3 jalapeño peppers, stems and seeds removed, finely chopped 2 plum tomatoes, diced 1 can of corn 1 yellow bell pepper, seeds and stem removed, diced 3 cloves garlic, minced 2 tablespoons extra virgin olive oil 2 tablespoons lime juice 1 teaspoon ground cumin

Directions In a medium bowl, mix black-eyed peas, green onions, corn, cilantro, jalapeño, tomatoes, bell pepper, and garlic.
In a separate bowl, whisk together olive oil, lime juice, and cumin.
