Skillet Breakfast Potatoes
Golden and crispy potatoes seasoned with herbs and spices, cooked to perfection in a skillet. This hearty and flavorful dish is the perfect addition to any breakfast or brunch spread.
Skillet Breakfast Potatoes
Ingredients
- 1 1/2 pounds russet potatoes
- 2 tablespoons butter
- 2 tablespoons olive oil
- pinch of cayenne

1 teaspoon Johnny's Seasoning Salt
- 1/2 teaspoon Garlic powder
- 1/2 teasponn Onion powder
- 1/4 teaspoon smoked paprika
- 1 Garlic clove
- Rosemary
- Thyme
Directions
- 1. Peel the potatoes and cut them into quarters. Arrange the quartered potatoes on a dish safe for microwave use.
- 2. Cover the dish with a microwave cover and microwave on high for 3.5 to 4.5 minutes. Test doneness by inserting a knife into the thickest part of a potato; it should encounter slight resistance.
- 3. Allow the potatoes to cool to room temperature.
- 4. Heat a 12-inch or larger skillet over medium-high heat, and add butter, olive oil, and rosemary, thyme, and one smashed garlic clove.
- 5. Once the butter has melted and the oil is hot, wait for the herbs to begin popping, then remove and discard them along with the garlic clove.
- 6. Place the diced potatoes in the skillet in a single layer and season generously with Johnny's seasoning salt, pepper, cayenne, garlic powder, onion powder. Toss to evenly coat.
- 7. Cook the potatoes for 8-10 minutes, flipping and tossing every 2-3 minutes for even browning.
- 8. Serve the potatoes immediately after cooking.
