Salmon Chowder
Ingredients
3-4 lbs salmon heads, fins and bones (remove gills)

1onion, chopped
2 whole carrots, chopped
2 celery stalks, chopped
1 cup white wine
1 handful dried mushrooms
2 bay leaves
1/4 lb thick-cut bacon
1 cup chopped yellow onion
2 celery stalks, chopped
1 1/2 pounds potatoes, peeled and diced
5-6 cups fish broth
1 to 2 lbs skinless salmon filets, cut into chunks
1 cup corn
2/3 cup heavy cream
black pepper

Directions
Prepare the broth by combining all broth ingredients in a pot and covering with water. Simmer for 30-45 minutes, then strain. Discard all of the solids in the broth mix and set the strained broth aside.
- Using the same empty pot, cook the bacon on medium heat until crispy, then remove and chop. Sauté onion and celery in bacon fat until soft.
- Add potatoes and broth along with any additional seasoning salt if needed, then simmer until the potatoes are tender (around 15-20 minutes). Lightly season the filets of salmon with Johnny's Alaskan Salmon Seasoning, then and it to the pot with the corn.
- Cook until the salmon is cooked through (around 5-6 minutes). Take the pot off the heat and stir in chopped bacon, dill, cream, and pepper. Enjoy!
