- 2-3 Tablespoons Oil, as needed

1 Tablespoon Jamaica Me Crazy Lemon Pepper Seasoning

Begin by filling a large pot with water and heating it on the stove without letting it come to a boil. While the water heats, cut the potatoes into uniform wedges.
Once the water is warm, add the potato wedges and let them soak for about 10 minutes. After soaking, drain the potatoes and transfer them to a baking sheet lined with parchment paper or lightly greased. Preheat your oven to 450°F).
Drizzle the potatoes with oil and toss them well to ensure they are fully coated.
Sprinkle half of the Jamaica Me Crazy Lemon Pepper Seasoning over the wedges, then flip them over and add the remaining seasoning for an even distribution.
Arrange the potato wedges in a single layer on the baking sheet to avoid overcrowding.
