This Grilled Parmesan Garlic Zucchini is a smoky, savory side featuring tender grilled zucchini topped with a crispy, garlicky panko mixture made with Johnny’s Parmesan Garlic. Finished with fresh lemon zest and thyme, it’s a flavorful, crowd-pleasing dish perfect for summer grilling.
In a small skillet, heat 1/4 cup oil, 2 minced garlic cloves, and 1/4 tsp crushed red pepper over low heat, stirring until garlic is golden, about 3–4 minutes. Let cool for 5 minutes.
Stir in 1/2 cup panko, 2 tsp Johnny’s Parmesan Garlic, 1 1/2 tsp thyme, 1 tsp lemon zest, and 1/4 tsp salt.
Preheat grill to high (at least 500°F) and oil the grates.
Slice 2 zucchini in quarters lengthwise and grill cut-side down for 5 minutes per side.
Flip zucchini top with the panko mixture, and grill covered for 2–3 more minutes until golden.
