Ingredients 1lb 5oz boneless, skinless chicken breast or chicken thigh 1 tsp sweet paprika 1 tsp garlic powder ½ tsp sea salt flakes ½ tsp cracked black pepper 1 egg ½ cup cornflour 1 tsp freshly minced garlic 1 tsp fresh minced ginger
½ cup Johnny’s Firecracker Sauce

¼ cup tamari or all-purpose soy sauce
¼ cup rice wine vinegar, plain white vinegar, apple cider vinegar, or lime juice
Steamed rice 1 spring onion, finely sliced 1 tsp sesame seeds
Directions 1. Mix chicken, paprika, garlic powder, salt, and pepper in a bowl. Add egg and cornflour, coating evenly.
2. Heat oil in a pan over medium-high heat. Fry chicken in batches until golden and cooked through. Drain on paper towels.
3. In a clean pan, sauté garlic and ginger for 30 seconds. Add Johnny's Firecracker Sauce, tamari, and vinegar/lime juice. Simmer for 2 minutes.
4. Toss fried chicken in the sauce. Serve over steamed rice garnished with spring onion and sesame seeds.
