Creamy Potato Salad

Ingredients

5 pounds Yukon Gold potatoes or Klondike Gold potatoes
2 cups mayonnaise
1 cup sweet pickle relish
2 tablespoons yellow mustard
1 tablespoon apple cider vinegar
1 tablespoon celery seeds
1/2 teaspoon paprika
1 tsp. Johnny's Salad and Pasta elegance
1/2 tsp. salt
1/2 tsp. pepper
3 celery stalks, diced
1/2 cup sweet onion, diced
1 tablespoon fresh chopped dill

Directions

Quarter the potatoes and place them in a large stockpot. Fill the pot with cold water until it covers the potatoes by 1 inch. Bring to a boil over high heat, add 1 tablespoon of salt, and cook for 13-15 minutes until the potatoes are fork-tender.
In a medium bowl, combine mayonnaise, sweet pickle relish, mustard, apple cider vinegar, celery seeds, paprika, Johnny's Salad & Pasta Elegance, salt, and pepper to taste. Mix until smooth. Then, chop the celery, onions, and dill.
Drain the boiled potatoes, remove loose peels, and chop them into 1/2-inch chunks. Place the potatoes in a large bowl and gently coat them with the mayonaise dressing. Stir in the celery, onions, and dill. Adjust seasoning with salt and pepper as needed. Garnish with fresh dill and paprika.
