1/4 cup cornstarch
1 large egg white
1-1/2 cups panko bread crumbs

Prepare the Shrimp: Set up three separate bowls. Place cornstarch in one bowl, egg whites in another, and panko breadcrumbs in the third. Coat each shrimp with cornstarch, then dip into the egg whites, and finally coat evenly with panko breadcrumbs, pressing gently to adhere.
