Spinach and Feta Muffins

  • 1/2 lb. spinach
  • 1/2 lb. feta cheese
  • 2 cups flour
  • 2 tsp. baking powder
  • 1 tsp. Johnny’s Seasoning Salt
  • 2 egg
  • 1/3 cup olive oil
  • 1 1/3 cups milk


  1. Preheat the oven to 350.
  2. Line a 12-cup muffin pan (or two 6-cup pans) with paper baking cups.
  3. Cut the feta into small cubes.
  4. Mix the flour, baking powder, and Johnny’s Seasoning Salt together in a bowl.
  5. Combine the spinach, beaten eggs, olive oil and milk in a separate bowl.
  6. Add the dry mixture to the spinach mixture; do not over mix. Fold in the feta cheese cubes.
  7. Divide the mixture evenly in the muffin cups. Bake for about 20 minutes.
