Quick Minestrone Soup
2 tablespoons olive oil
2 cloves garlic chopped
1 cup chopped onion
1 cup thinly sliced carrots
1 medium zucchini, chopped
1 (8oz) Johnny’s Au Jus Concentrate (liquid)
2 (14.5 oz) can Italian diced tomatoes
1 (14.5 oz) can green beans
2 (15.25 oz) kidney beans
2 (14.5 oz) cans of vegetable or chicken stock
3 ½ cups water
Salt and pepper to taste
1 cup macaroni, uncooked
- Sauté onion, carrots and zucchini in olive oil for approximately 5 minutes.
- Add remaining ingredients, except macaroni, and cook on medium/high heat for 10 minutes.
- Add macaroni and cook till pasta is done.
*For variety add 1 lb cooked Italian Sausage, Ground Beef or Steak
